Hi, there! I know it's been a while since I last posted... Sorry, I need to schedule better my life.
Today, we have the recipe for Taralli al Vino Bianco (Sweet White Wine Cookies).
Those of you have been to Puglia I'm sure you have tried plenty of them. A specialty of the South, basically they are like a cracker that can be either savory or sweet. The salty ones are great to accompany your evening aperitivo, and the sweet ones I like to serve as dessert, together with some sweet wine that you can dunk them in.
Enough with the chit-chat, here is how they are made!

Taralli al Vino Bianco (White Wine Cookies)

Ingredients to make white wine cookies, a cat is sniffing a glass of wine.
Ingredients
  • Flour (I used Tipo 00)                                  250g
  • Sugar(Plus more for dusting)                    50g
  • Olive Oil                                                           80g
  • White Wine (dry, not the sweet kind)     60g
  • Baking Powder                                               8g
  •                     Salt (Just a pinch)
Directions
  1. Prepare two bowls. Pour the wine and olive oil in one and mix well. Combine the flour, sugar and baking powder in the other.
  2. Pour the wine mixture into the bowl with flour and start mixing with a wooden spoon and finally with your hands.
  3. Wrap the dough with plastic and let it rest in the fridge for one hour.
  4. Preheat your oven to 180℃.
  5. Take a small portion of the dough and make mini logs with your hands then into a circle shape.
  6. Dunk the cookies into extra sugar and place them onto a baking sheet.
  7. Bake the cookies for 20-25min. Let cool before devouring.
